National Pancake Day

I'm not the type of homeschool mom that always knows the fun holidays and plans ahead for them. I am, however, the type of homeschool mom that will pull something together at the last minute if it sounds like fun.

This morning, I had a few spare minutes while Lauren was getting dressed for school and I logged into Facebook. Several of my friends were talking about going to IHOP for National Pancake Day. Yummy idea! Since we can't go out to eat pancakes, I decided to make pancakes for lunch.

A couple weeks ago, I tried a recipe for an allergy-friendly baked pancake on Hives in the Kitchen. The Baked Cinnamon Swirl Pancakes were perfect to make today because I wouldn't have to worry about spending a lot of time cooking pancakes a few at a time.

What a wonderful treat we all enjoyed today! National Pancake Day might become one of our family's favorite holidays.

  1. OOOH...They look yummy. And since Shrove Tuesday is coming up next week...I could be persuaded to make this instead of donuts.

  3. Meg, I think they'd be a perfect stand-in for donuts. They'd be just as yummy and far easier for you to make. I'd recommend doubling the recipe for your crew, though.
