Today's blogging challenge prompt is to share a special recipe. I don't know many recipes for "special" foods off the top of my head so I'll just share a favorite, easy recipe that I haven't posted on my blog before.
"Cheater" Red Beans and Rice
1 can beef broth
1 1/2 cups white rice
1 tsp oregano
1/2 tsp garlic powder
1 pound ground sausage
1 onion
1 or 2 bell peppers (green, red, or one of each)
2 cans red beans, rinsed and drained.
Combine beef broth and enough water to make 3 cups total liquid. Bring to a boil, add white rice and seasonings. Reduce heat to low and let simmer for 20 minutes.
Meanwhile, heat ground sausage in a large skillet. Break up with a large spatula as it cooks. Add chopped onion and bell peppers. Continue to cook, stirring frequently, until sausage is fully cooked and the vegetables are soft.
When rice is cooked, add sausage/vegetable mixture and the red beans.
Serve with a tossed salad and hot bread. Makes enough for at least six or eight generous servings.
*Note: it tastes almost as good if you leave out the beef broth and just use water to cook the rice.

This is one of my youngest daughters' favorite meals. We usually make a huge amount in the crock pot and then reheat for lunch throughout the week.
ReplyDeleteI have a crockpot recipe that I like even better than this one. That's why our family has dubbed this one "cheater" red beans and rice.
