Easy Marinated Pork Chops

When we were camping a few weeks ago, one of our dinner meals was this pork chop recipe cooked on our camp grill. I fixed it again last weekend because I just love it when something so easy tastes so good.

Easy Marinated Pork Chops

1 jar of apricot preserves
1 Tbsp finely chopped ginger root
1/2 tsp salt
Pork chops (boneless or regular bone-in)

Mix the first three ingredients and pour over the pork chops. Let marinate for a few hours or even a few days. When we went camping, I made the marinade the day before we left, poured it over the pork chops in a gallon ziplock bag, and froze it. The meat took a few days to thaw in the cooler and then was grilled.

Grill the pork chops on either a grill, either a gas grill like the one we had while camping or over charcoal.
